How should mortality as the masses know it be taken when put in statistical form?

Stalin was once quoted to have said "The death of one is a tragedy, the death of a million is a statistic." Since then, insurance companies and various other organizations take death rates and made them a science. How, as mortals, are we to take that somone dies every second of every day?
